One Week Vegan

When we tell someone we are vegans the first question they typically have is "What do you eat?" So I thought I would take some time and answer that question in a post. This is a snapshot of what my husband and I will be eating this week. 

Breakfast: Tofu Scramble or Apple and Pear Oatmeal Bake

Lunch: Dinner Leftovers. We pack our lunch everyday for work with leftovers some popcorn or pretzels and lots of fruit. 

Dinner: Veggie Burgers and Fries, Hummus Wraps, Tofu Scramble (little breakfast for dinner action) Buddha Bowls, and Salad

Our staple snacks are: Pretzels and hummus, popcorn, Cuties, apples, bananas and grapes. (Our fruits rotate a bit depending on what were in the mood for and what's in season.)

This was my grocery list:

  • Walnuts
  • Baking Powder
  • Franks Red Hot (Chris would drink this if I let him!)
  • Peanut Butter
  • Maple Syrup
  • Bread
  • Cuties (The best brand of clementines in my opinion) 
  • Brocoli
  • Carrots
  • 6 Bell Peppers
  • Cauliflower
  • 1 White Onion
  • 1 Red Onion
  • Bananas
  • 2 Avacados
  • Salad Mix
  • Black Beans
  • Tofu
  • Frozen French Fries
  • 72% Cacao (Chocolate is a necessity)

Once you get in a groove of eating healthier foods on a regular basis you typically have a lot of what you need already in your cabinet. Like this week we will need nutritional yeast and and Field Roast Sausages but because we tofu scramble every week these ingredients are already on hand. 

Switching to a vegan diet takes a bit of work but we feel so much better, have lost so much weight and are saving so much money. The rewards are 100% worth it!
